Roasted Aubergine with Creamy Cashew Butterbeans

This is all round full on flavour and goodness – The roasted Aubergines have a sweet and spicy kick topped on a bed of creamy, herby butterbeans. Serve straight to the table and tuck in.

Curried Cottage Pie

A comforting classic with a delicious curry spice twist. Serve with a crunchy winter slaw, some watercress and a dollop of lime pickle.

Rustic Ratatouille

A chunky vegetable stew with olive oil and herbs. Super simple to prep – tasty and comforting.

Banging Black Beans

These smokey black beans are SO good & SO simple, big on flavour and goodness. I always make a batch to pop some in freezer. Tuck into tacos, roll into burrito’s, pile into pittas, rice bowls or top onto a crispy baked potato!

Caribbean Veggie Curry

This deliciously comforting curry is made with a blend of warming spices including allspice, ginger, and cinnamon that gives a bold and authentic flavour. A great recipe to brighten up these winter months.

Roasted Butternut Squash Pasta with Sage & Red Onions

Roasting the squash first makes it deliciously ozzie and extra tasty – making this a full on flavour packed pasta dish that everyone will love!

Fridge Raid Yaki Soba

A favourite stir fry noodle dish packed with flavour, texture and and a great way of using up any bits of bobs in the fridge – Use what you have and make this your own.

One Pan Brunch Shakshuka

This is favourite in our house. A one pan recipe with peppers, tomato & creamy garlicky tofu tucked in – cooked with fragrant spices makes this a simple, delicious & comforting weekend breakfast/ brunch.

Cheesy Cauli & Broccoli Bakeq

Roasted veggies with a creamy cashew sauce, topped with a generous handful of cheese and breadcrumbs cooked until bubbling, golden and delish!

Creamy Whipped Tofu with Spicy Balsamic Tomatoes

Breakfast, lunch or dinner this is seriously good. The deliciously creamy tofu doesn’t even taste like tofu… and it doesn’t need any cooking! Just whip up the ingredients until smooth! I’ve used firm tofu for this one but if you want it super silky smooth just swap for silken tofu.
